เรื่องของอาหาร ชายจุกกล้าพูดได้เลยว่ามันไร้พรมแดน ไร้ชาติ หรือแม้กระทั่งไร้ศาสนากันเลยแหละ อาหารหลายอย่างมันเย้ายวนและไม่มีข้อจำกัด ซึ่งที่ Enoteca ทำให้เราเห็นสิ่งนั้น เมื่อได้ตัวเชฟสเตฟาโน บอร์รา (Stefano Borra) เชฟใหม่จากตูริน ที่ก้าวข้ามข้อจำกัดของอาหารอิตาเลียนด้วยการเติมกลิ่นอายของอาหารฝรั่งเศสเข้ามาให้อาหารของเขาที่เอโนเทก้าโดดเด่นอย่างน่าสนใจ เชฟสเตฟาโน เดินทางจากบ้านเกิดในเมืองตูริน แคว้นพรีมอนต์ไปร่ำเรียนวิชาการครัวไกลถึงฝรั่งเศสและทำงานอยู่นาน นั่นจึงเป็นเหตุผลว่าทำไมอาหารของเขาจึงมีกลิ่นอายของฝรั่งเศส ก่อนตัดสินใจกลับมาที่ตูริน และเปิดร้านของตัวเองในชื่อ Restaurant VO จนได้ดาวมิชลินมาครอง ก่อนตัดสินใจเดินทางมาร่วมงานกับเอโนเทก้า เชฟไม่ได้พูดอะไรมากนอกจากให้ชายชิมเทสติ้งเมนูที่ดูเหมือนว่ามันจะเข้าใจง่ายกว่าการนั่งพูดคุยกัน ชายตื่นเต้นกับของกินเล่นอย่างหนังปลาทอด สาคูทอด แคบหมู มันน่าสนใจว่าร้านอิตาเลียนดังเลือกเสิร์ฟอะไรแบบนี้ซึ่งแปลกดี Amuse Bouche ครัวซองต์จิ๋วกับพัฟไส้เนื้อนกกระทา และไอศกรีมพาร์มีซานกับทรัฟเฟิล จานแรกเป็นเมนูอาหารอิตาเลียนประจำเมืองตูริน Tuna Terrine with Red Bell Pepper Cream เทอร์รีนทูน่าที่รสจัดหน่อยกับครีมพริกหวานที่เคลือบด้านนอก จานถัดมามีความเฟรนซ์มาก Foie Gras in Different ways ชายไม่คุ้นเคยกับฟัวการ์สในอาหารอิตาเลียน แต่เชฟก็อยากนำเสนอหนทางสมัยใหม่ของการปรุงอาหาร เริ่มที่ลิควิดฟัวการ์สที่ซ่อนอยู่ภายในบอลมันฝรั่งทอด ฟัวการ์สเทอร์รีนกับฟิกซ์แห้ง ฟัวการ์สทอดกระทะเคลือบพอร์ตไวน์ และที่อร่อยที่สุดฟัวการ์สแครมบรูเล Read more: http://www.gourmetandcuisine.com/going_out_eating/detail/64
